Lightning Quick Cocktails to Make at Home

Here are a couple of lighting quick cocktails to make in under two minutes, with no faff, shaking or fancy equipment. With London bars currently on lockdown, we’ve got no choice, we either use a cocktail delivery service or make our own – unless you are one of the few brave souls who have decided to go teetotal.

Quick Cocktails to Make at Home

The Spritz Cocktail

Aperol Spritz in Under 2 Minutes

Aperol Spritz was my daily addiction on a trip to Venice a couple of years ago …a view of Santa Maria Gloriosa Dei Friari (which houses Titian’s Assumptian of the Virgin), a large lurid orange spritz and a plate of cicchetti (bar snacks) and my lunch was sorted.

Serves 1

Ingredients

A dash of Aperol
150mls of prosecco
Ice cubes
1 chunk of orange preferably blood orange
1 green olive in brine or a few rosemary sprigs

  • Pour a dash of Aperol into a glass
  • Top up with prosecco
  • Add a few cubes of ice
  • Skewer a chunk of orange and an olive onto a cocktail skewer and place in glass or add a sprig of rosemary

The Champagne Cocktail

Speedy Champagne Cocktail

Serves 1

Ingredients

Angostura Bitters
1 sugar cube
Brandy
Champagne

  • Shake a few drops of Angostura bitters on to a sugar cube and place in a Champagne glass
  • Add a dash of brandy
  • Top up with chilled champagne

Tip

Invest in a couple of fancy glasses and open a few upmarket snacks and you could be half way to imagining yourself in The Fumoir at Claridges which is one of the first places I am going to hit when we are out of lockdown.

If you are drinking alone, with nothing to celebrate except a night of Netflix, you may want to leave the Moet for another occasion. Hunt down some prosecco in the supermarkets for this cocktail. Tesco has a great bottle of extra dry prosecco for £4.95 and it works fabulously well in both of these drinks.
